Santa Cruz Seafood Sandwiches
1 (12- oz.) bag frozen Contessa Cooked Large Shrimp thawed, well-drained, tails removed and coarsely chopped
1 cup jicama diced
2 hard-cooked eggs peeled and chopped
1 large tomato chopped
1/4 cup green pepper minced
1/4 cup fresh cilantro chopped
1/4 cup Best Foods Light Mayonnaise
1 tbsp. dry Caesar salad dressing mix (from a 1.2-oz. package)
1 tsp. lemon juice
4 butter lettuce leaves
4 croissants cut in half horizontally
Prep time: 20 minutes

In a medium bowl, stir together all ingredients except lettuce and croissants. Place 1 lettuce leaf on each split croissant. Top with equal amounts of shrimp salad and serve immediately.

Makes 4 servings.

Lower-carb option: Instead of serving salad on a croissant, serve on a bed of lettuce, in a tomato shell or on an avocado half.
