Summer Corn Salad
1 (16- oz.) bags frozen corn thawed
3/4 cup Mezzetta Roasted Red Bell Peppers (found by the olives) julienned
1/2 cup Ken's Steak House Light Olive Oil Vinaigrette
1/4 cup sliced fresh basil
2 tbsp. white balsamic vinegar
1 (9- oz.) package Louis Rich Grilled Chicken
Breast Strips (optional)*

*Add chicken and 2 tbsp. additional
vinaigrette to make this a main-dish salad.
Prep time: 15 minutes

Toss together all ingredients in a medium bowl.
Chill until ready to serve.

Makes 8 to 10 servings.
