Banana, Flax and Pecan Bread
Ingredients
1 cup whole wheat flour (Natural Foods Dept. bulk bin #604)
1 cup Spectrum Essentials Ground FlaxSeed
1/2 cup Splenda
1 tsp. baking powder
1/2 tsp. Arm & Hammer Baking Soda
1/2 tsp. salt
1 cup very ripe, bananas mashed
1/2 cup Tree Top Natural Apple Sauce
2 egg whites
1 egg
1/2 cup Sun•Maid Raisins*
1/4 cup pecans (Natural Foods Dept. bulk bin #753) chopped
*For extra flavor, soak raisins in gin or fruit juice before adding to batter.
Directions

Prep: 15 minutes Cook: 30 minutes Makes: 8 to 10 servings

1. Preheat oven to 350°F and spray 2 mini loaf pans with nonstick cooking spray. In a large bowl, stir together flour, flaxseed, Splenda, baking powder, baking soda and salt.
2. In a medium bowl, stir together remaining ingredients. Pour over dry ingredients and stir just until dry ingredients are moistened.
3. Spoon batter into prepared pans and bake for 30 minutes or until a toothpick inserted into the center comes out clean. Cool on wire racks for 10 minutes.
