Guacamole Olé
2 large, ripe avocados
1/4 cup each: small red and yellow bell peppers chopped
1/4 cup tomato chopped
2 tbsp. red onion minced
2 tbsp. plain yogurt
1 tbsp. freshly squeezed lime juice
2 tsp. Spectrum Essentials Flax Oil
1/2 tsp. sea salt
Prep time: 10 minutes

Cut avocados in half and discard the pits. Scoop out the
flesh into a medium bowl and mash until slightly chunky.
Stir in remaining ingredients. Serve immediately with
tortilla chips or baked pita chips.

Makes 4 to 6 servings.
