Caesar Bowtie Salad
Caesar Bowtie Salad
1/2 lb. bowtie pasta
2/3 cup Caesar salad dressing
1/2 cup Nature Sweet Vine Ripened Tomatoes
1/3 cup shredded Parmesan cheese
2 tbsp. fresh basil
freshly ground pepper to taste
1/4 cup pine nuts toasted
Prep time: 10 minutes
Cook time: 10 to 12 minutes
Chill time: 30 minutes

Cook pasta in boiling water according to package directions. Drain and rinse in cold water to cool off pasta; drain well again. Combine pasta and dressing; toss well to coat. Carefully stir in tomatoes, cheese and basil; season to taste with pepper. Transfer to a decorative bowl and sprinkle with pine nuts. Let chill for 30 minutes before serving.

Makes 6 servings.

Tip! To toast pine nuts, cook on a baking sheet at 375°F for 5 to 10 minutes, checking and stirring frequently. Or, cook in a small skillet over medium heat for about 5 minutes, stirring frequently until golden brown.
