Grilled Turkey with Apricot Barbecue Sauce
Grilled Turkey with Apricot Barbecue Sauce
1-1/4 cups bottled barbecue sauce
1 (15- oz.) can diced apricots in light syrup drained
1/4 tsp. ground allspice
1/4 tsp. pepper
1 (20- oz.) package turkey tenderloins boneless
Salt and pepper to taste
Prep time: 5 minutes
Cook time: 30 minutes

Combine barbecue sauce, apricots and allspice in a food processor or blender container and blend until smooth. Stir in 1/4 tsp. pepper and pour mixture into two bowls (one for grilling and one for the table). Rinse turkey and pat dry. Season to taste with salt and pepper and brush lightly with some of the sauce. Grill over medium heat for about 20 minutes, turning and brushing with sauce several times. Remove from grill when turkey reaches an internal temperature of 165°F. Let stand for 5 minutes, then cut into slices. Serve over couscous* with remaining apricot barbecue sauce.

Makes 4 servings.

Tip! Serve leftover barbecue sauce with

chicken strips or crisp egg rolls.

*Couscous is in the rice aisle. It takes only 5 minutes to cook!
