Chicken Bacon Ranch Quesadilla
1/4 cup Monterey Jack cheese shredded
1/4 cup cooked chicken (rotisserie chicken works well for this) diced
1 tbsp. bacon or real bacon bits cooked, crumbled
1 tbsp. green onion tops sliced
Serve with ranch dressing for dipping.
For each quesadilla, start with 1 soft taco size flour tortilla (about 7 to 8 inches). Place the filling ingredients on half of each tortilla, leaving a 1-inch border around the edge. Fold tortilla in half over filling. Cook for about 2 to 3 minutes on each side or until tortilla is crispy. (Remember, the quesadillas will cook faster if the skillet is already hot!) Remove from the skillet and let cool for a minute or so. Cut into wedges to serve.
