Rosemary Pork Chops with Marmalade Glaze
1-1/2 lb. pork rib chops thick-cut
Salt and freshly ground pepper
2 tbsp. fresh rosemary divided
1 tbsp. fresh parsley chopped
1 tbsp. canola oil
1/2 cup orange marmalade
1/2 cup sweet wine, such as Moscato or Gewurztraminer
2 tbsp. lemon juice
1 tbsp. butter
Prep time: 15 minutes
Cook time: 40 minutes

Rinse pork and pat dry; sprinkle with salt, pepper, 1-1/2 tbsp. rosemary and parsley. Heat oil in a large skillet and cook pork over medium-high heat until browned on both sides. Reduce heat and cook over medium-low heat for 10 to 15 minutes or until internal temperature reaches 145°F. Remove from skillet and keep warm. Add marmalade, wine, lemon juice and butter to the skillet. Bring to a boil; reduce heat and simmer for 10 minutes or until mixture forms a glaze. Return cooked pork to skillet and cook for 5 minutes more. Sprinkle with remaining rosemary.

Makes 4 to 6 servings.
