Dijon Herb Butter for Steak
2 tbsp. stoneground mustard
2 tbsp. butter
2 tbsp. chopped fresh herbs
1 tsp. minced garlic
1/2 tsp. coarse black pepper
1/2 tsp. sea salt
Stir together all ingredients in a small bowl. Place a small dollop on cooked meat.

Flavored butters are just what they sound like: seasonings mixed into butter, usually at room temperature. They can be mixed in a flash, are easy to spread and take advantage of butter’s talent for mellowing and blending flavors. You can make them ahead of time and even freeze them for up to two months. They provide a melt-in-your-mouth lushness when added to meat just before serving.
