Onion, Anise and Prosciutto Pizza

Onion, Anise and Prosciutto Pizza
2 tbsp. butter
1 large onion peeled and sliced
1 bulb anise (fennel) thinly sliced (white bottom part only)
2 (12- oz.) packages Mama Mary's Pizza Crusts
1 (16- oz.) package fresh mozzarella cheese thinly sliced
1/2 cup julienne cut sun-dried tomatoes drained
1/2 cup prosciutto thinly sliced and chopped
1/4 cup shredded Parmesan cheese
1/4 cup fresh basil

Prep: 15 minutes Cook: 40 minutes Makes: 12 servings

1. Melt butter in a large skillet; add onion and anise. Cook over low heat for about 20 minutes or until very soft, stirring frequently; set aside. Place equal amounts of mozzarella cheese on each pizza crust. Top with equal amounts of onion mixture, sun-dried tomatoes, prosciutto and Parmesan cheese.
2. Cook on a grill over very low heat for about 10 minutes, moving from time to time and checking the bottom of the crust to avoid burning. Pizzas are done when cheese is melted and crusts are lightly browned on the bottom. Remove from grill and sprinkle with basil. Cut each into 6 wedges.
Instead of grilling, bake at 400°F for 10 to 12 minutes.
