Heirloom Tomato Vinaigrette
Heirloom Tomato Vinaigrette
1/3 cup extra virgin olive oil
1/3 cup sherry vinegar
1 heirloom tomato cored and diced
1 tbsp. fresh chervil or dill leaves
1½ tsp. Dijon mustard
1/4 tsp. salt
fresh mozzarella cheese
mixed greens

Puree 1/3 cup extra virgin olive oil, 1/3 cup sherry vinegar, 1 cored and diced heirloom tomato, 1 tbsp. fresh chervil or dill leaves, 1½ tsp. Dijon mustard and 1/4 tsp. salt in a blender or food processor. Season to taste with freshly ground pepper. Drizzle over sliced ripe tomatoes, fresh mozzarella cheese or mixed greens.
