Deep Fried Bacon & Corn Balls
Deep Fried Bacon & Corn Balls
1 (8.5- oz.) package Jiffy Corn Muffin Mix
1 cup fresh, canned or fr ozen and
thawed corn
1/2 cup minced red bell pepper
1/2 cup minced onion
1½ tbsp. chopped fresh herbs (such as
thyme, basil or rosemary)
4 slices bacon, cooked until crisp
and crumbled
2 eggs
Oil for frying
Freshly ground sea salt (optional)

Prep: 10 minutes Cook: 15 minutes

1. Combine all ingredients except oil and
sea salt in a large bowl until well mixed.
2. Heat 2 inches of oil in a large saucepan over medium heat. Drop batter by rounded tablespoonfuls into oil. Fry, turning once,
until golden brown on both sides and
cooked through.
3. Drain on paper towels and sprinkle with freshly ground sea salt, if you like.
Serve immediately.
