Tequila Lime Chicken Breasts
Tequila Lime Chicken Breasts
2 to 2-1/2 lb. boneless, skinless chicken breast fillets pounded to 1/2-inch thick
1 cup frozen limeade concentrate undiluted, thawed
6 tbsp. tequila
2 tbsp. olive oil
2 tsp. garlic salt
1/2 tsp. pepper
1/4 cup fresh cilantro chopped
lime peel (optional) grated
Prep time: 15 minutes

Marinate time: 1 hour

Cook time: 10 to 15 minutes

Combine all ingredients except cilantro and lime peel in a shallow dish or large
resealable plastic bag. Cover or seal and refrigerate for at least 1 hour to
marinate. Place chicken on a grill over medium heat and cook for 5 minutes
per side or until lightly charred and internal temperature reaches 165°F.
Remove from grill and sprinkle with cilantro and lime peel, if desired.

Makes 8 servings.

There are several advantages to using heavy, resealable plastic bags for
marinating meats. First, less marinade is needed, and you can distribute it
easily by occasionally turning the sealed bag. Also, clean-up is a snap. Just
throw away the messy bag.
