Marinated Chicken and Black Bean Salad
Marinated Chicken and Black Bean Salad
Ingredients
4 Tequila Lime Chicken Breasts (see recipe) diced
1 (15- oz.) can S&W Black Beans rinsed and drained
1/2 cup red bell pepper chopped
1/2 cup yellow bell pepper chopped
1/3 cup red onion minced
2 cups romaine lettuce thinly sliced
1/4 cup fresh cilantro chopped
1/4 cup extra light olive oil
3 tbsp. frozen limeade concentrate undiluted, thawed
3 tbsp. cider vinegar
1 tsp. McCormick Mexican Seasoning
1 tsp. garlic salt
1/4 tsp. pepper
Directions
Prep time: 20 minutes
Chill time: several hours

Toss all ingredients except lettuce in a medium bowl. Cover and refrigerate several hours for flavors to blend. Toss with lettuce just before serving.

Cilantro Lime Dressing:
Whisk together 1/4 cup chopped fresh cilantro, 1/4 cup extra light olive oil, 3 tbsp. frozen limeade concentrate (undiluted, thawed), 3 tbsp. cider vinegar, 1 tsp. McCormick Mexican Seasoning, 1 tsp. garlic salt and 1/4 tsp. pepper.

Makes 4 servings.
