Grilled Pastrami Sandwiches
Grilled Pastrami Sandwiches
1 large onion peeled and cut into 1/4-inch slices
1/3 cup light Caesar dressing divided
8 slices sourdough bread
4 slices Land O’Lakes Provolone Cheese
12 oz. thinly sliced pastrami
Prep time: 10 minutes
Cook time: 15 minutes

Place onion slices on a grill over medium heat (using a grill basket will help keep them from falling through the grates). Cook for 5 minutes per side or until lightly charred; remove from grill and toss with 2 tbsp. dressing. Meanwhile, lightly brush one side of each bread slice with remaining dressing. Place on the grill while onions are cooking, dressing side down, and place cheese on 4 of the bread slices. Top with onions and pastrami and close sandwich. Reduce heat to low (or move sandwiches away from direct heat) and grill for about 5 minutes per side to lightly brown the bread and heat the cheese and pastrami.

Makes 4 servings.
