Peach Melba Cobbler
Peach Melba Cobbler
8 cups fresh, ripe peaches sliced
3/4 cup sugar
2 tbsp. lemon juice
1-1/2 tbsp. cornstarch
1 tsp. cinnamon
1 (6- oz.) container fresh raspberries
1 box yellow cake mix
1/2 cup butter softened
1 egg yolk
Prep time: 15 minutes
Cook time: 45 minutes

Preheat oven to 375°F and spray a 13-by-9-inch baking dish with nonstick cooking spray. Place peaches, sugar, lemon juice, cornstarch and cinnamon in baking dish and toss well to coat peaches with mixture. Sprinkle with raspberries. Stir together cake mix, butter and egg yolk with a fork or pastry blender and sprinkle over the top of the peach mixture. Bake for 45 minutes or until golden brown on top. Let cool slightly before serving with vanilla ice cream, if desired.

Makes 12 servings.
