Plum and Sweet Wine Ice
Plum and Sweet Wine Ice
5 lb. plums
1 cup water
1/2 cup sweet wine (such as Moscato)
2 tbsp. lemon juice
2 cups sugar
Ice, rock salt (for ice-cream maker)

Prep: 30 to 45 minutes, Cook: 10 minutes,
Chill: 1 hour, Serves: 8

Drop plums into boiling water for 30 seconds. Remove and plunge into ice water. Slip off skins and cut fruit away from pits. You should have 4 cups of diced plums. Puree in a blender or food processor. Meanwhile, heat water, wine and lemon juice in a small saucepan. Add sugar and cook over low heat for 1 to 2 minutes or until sugar is dissolved. Remove from heat and stir into plums. Let mixture cool, then pour into the chilled container of an ice-cream maker. Freeze according to manufacturer’s instructions, then chill in the kitchen freezer for at least 1 hour.
