Greens and Cheese Squares

Greens and Cheese Squares
1-1/4 lb. kale or favorite greens (a mixture works well) cut into 1-inch pieces
1 tbsp. Earth Balance Buttery Spread
1/4 cup red onion chopped
1/2 tbsp. garlic minced
Salt and pepper
2 egg whites or 1/8 cup egg substitute
3/4 cups plain Silk Soymilk
1/4 cup whole wheat flour
2 to 3 drops hot pepper sauce
1 cup Swiss cheese shredded
1 cup reduced fat Monterey Jack cheese
Prep time: 20 minutes
Cook time: 35 to 40 minutes

Preheat oven to 350°F and spray an 8- or 9-inch baking dish with nonstick cooking spray. Bring a large pot of water to a boil and cook kale for 5 minutes or until leaves and stems are tender. Drain under cold running water; squeeze dry and coarsely chop. Melt buttery spread in a large skillet and add onions. Cook for 5 minutes or until onions are translucent. Add garlic and kale; cook over medium heat, stirring occasionally, until all excess liquid has evaporated. Remove from heat and season with salt and pepper. Beat eggs, soymilk, flour and hot pepper sauce together in a medium bowl or blender. Sprinkle 1/3 of the cheese over the bottom of the prepared pan and top with 1/2 of the kale mixture. Repeat layers and top with remaining cheese. Pour the egg mixture evenly over the top and bake for 25 to 30 minutes or until a knife inserted in the center comes out clean.

Makes 5 to 6 servings.
