Lemon Ginger Granita
Lemon Ginger Granita
2½ cups water
2 cups sugar
1½ cups lemon juice
1 tbsp. grated fresh ginger
Lemon (optional)

Prep: 10 minutes, Chill: 8 hours total, Serves: 8 

1. Heat water and sugar in a medium saucepan until sugar is dissolved. Remove from heat and stir in lemon juice and ginger; chill well.

2. Pour into a 1-quart dish; cover and freeze for 8 hours.

3. Scrape the top with a fork until mixture is slushy. Return to freezer for at least 4 more hours; scrape with a fork again until light and fluffy.

4. Spoon into small dishes and garnish with a small piece of fresh lemon, if you like.
