Ingredients
2½ tbsp. Tofutti Cream Cheese or whipped cream cheese
fajita-size whole wheat or spelt tortilla
1 tbsp. Eat Smart Sweet Salsa
3 tbsp. Westbrae Natural Black Beans rinsed and drained
1/2 cup romaine lettuce chopped
1/4 cup Organic Valley Mexican Blend Cheese (in that order) Shredded
Directions

Prep: 10 minutes

Spread Tofutti Cream Cheese or whipped cream cheese over 2/3 of a fajita-size whole wheat or spelt tortilla. Top with 1 tbsp. Eat Smart Sweet Salsa, 3 tbsp. rinsed and drained Westbrae Natural Black Beans, 1/2 cup chopped romaine lettuce and 1/4 cup Organic Valley Shredded Mexican Blend Cheese (in that order). Roll up tightly, ending with the empty part of the tortilla (the mixture will spread out as you roll). Wrap tightly and refrigerate until ready to serve. If sending in a lunchbox, make sure to pack with a reusable ice pack or frozen juice box.

Serves: 1 large or 2 small
