Grilled Shrimp Ceviche Quesadillas
Grilled Shrimp Ceviche Quesadillas
Ingredients
1-1/2 cups small shrimp (about 1/2 lb.)
1/2 cup Raley’s Pico de Gallo (from the Produce Dept.)
3 tbsp. taco sauce
2 tbsp. fresh lime juice
2 cups Monterey Jack cheese shredded
1 ripe avocado peeled, pitted and cubed
6 (7 -inch) flour tortillas
Sour cream
Directions
Prep time: 15 minutes, Cook time: 10 minutes

Rinse shrimp and drain; press between paper towels to remove excess moisture. Stir together shrimp, pico de gallo, taco sauce and lime juice in a small bowl. Cover and let marinate for 10 minutes. Place equal amounts of cheese, avocado and shrimp mixture on half of each tortilla; fold over to enclose filling. Place on a grill over low heat and cook for 3 to 5 minutes or until lightly browned. Carefully turn and grill the other side. Serve with sour cream.

Makes 6 servings.
