Grilled Shrimp Ceviche Quesadillas

Grilled Shrimp Ceviche Quesadillas
Ingredients
1½ cups small shrimp (about 1/2 lb.)
1/2 cup Raley's Pico de Gallo (from the Produce Dept.)
3 tbsp. taco sauce
2 tbsp. fresh lime juice
2 cups shredded Monterey Jack cheese
1 ripe avocado, peeled, pitted and cubed
6 (7- inch) flour tortillas
Sour cream
Directions

Prep: 15 minutes, Cook: 10 minutes, Serves: 6

1. Rinse shrimp and drain; press between paper towels to remove excess moisture. Stir together shrimp, pico de gallo, taco sauce and lime juice in a small bowl. Cover and let marinate for 10 minutes.

2. Place equal amounts of cheese, avocado and shrimp mixture on half of each tortilla; fold over to enclose filling. Place on a grill over low heat and cook for 3 to 5 minutes or until lightly browned.

3. Carefully turn and grill the other side. Serve with sour cream.
