Portabella Philly Cheesesteaks
Portabella Philly Cheesesteaks
1 small onion peeled and thinly sliced
1 tbsp. butter
1/2 tsp. garlic salt
2 cups bite-size pieces Harris Ranch Cooked Tri Tip, plus juices from package
1/2 cup green bell pepper strips (1-by-1/4- inch)
4 large portabella mushrooms stems removed
4 provolone cheese
4 (3/4 -inch thick) slices French bread (optional)
Prep time: 15 minutes, Cook time: 20 minutes

Place onion, butter and garlic salt on a large piece of heavy duty foil. Bring the ends of the foil up to the center and fold over twice; fold in the ends to seal package. Place beef, juices and bell pepper strips in another large piece of foil and enclose as directed above. Place both packets on the grill over medium heat, cooking the onion packet for 10 minutes and the beef packet for 5 minutes. Remove from grill and drain juices from beef packet. Place mushrooms on grill and cook for 2 to 3 minutes per side. Place a piece of foil on the grill and transfer mushrooms, stem side up, to foil. Fill mushrooms with equal amounts of onion and beef mixtures. Top each with a slice of cheese. Cook for 5 to 7 minutes more or until mushrooms are cooked and cheese is melted. Serve as is or place each on a lightly toasted slice of French bread.
