Spicy Peanut Chicken Breasts
1-1/2 lb. chicken breasts boneless, skinless
1 (3.5- oz.) packet A Taste of Thai Spicy Thai Peanut Bake
Prep time: 5 minutes, Cook time: 20 to 25 minutes

It's as easy as 1-2-3.

1) Preheat oven to 350°F. Line baking sheet with foil.
2) Pour one inside envelope (2 envelopes per packet) into a
shallow bowl. Coat chicken breasts on both sides and place
on baking sheet.
3) Bake for 20 to 25 minutes or until done with no pink
inside and an internal temperature of 165°F.

Makes 4 servings.

Here's the perfect accompaniment!

Coconut Rice
In a medium saucepan, combine 1 cup uncooked Calrose rice,
3/4 cup water, 3/4 cup canned coconut milk and 1 tbsp.
butter. Bring to a boil; reduce heat to low and simmer,
covered, for 20 minutes. Remove from heat and let stand for
5 minutes; fluff with a fork and sprinkle with sliced chives
and chopped cilantro.
