Garlic and Herb Grilled Lamb
Ingredients
1/3 cup extra virgin olive oil
1/3 cup lemon juice
4 cloves garlic
1 1/2 tbsp. fresh oregano chopped
1 1/2 tbsp. fresh rosemary chopped
3/4 tsp. each: sugar and salt
1/2 tsp. coarse black pepper
2-1/2 to 3 lb. leg of lamb boneless
1 tbsp. balsamic vinegar
1 cup small cherry tomatoes halved
Directions

Prep time: 15 minutes Marinate time: Several hours or overnight Cook time: 10 to 20 minutes Whisk together oil, lemon juice, garlic, herbs, sugar, salt and pepper in a medium bowl. Set aside 3 tbsp. mixture; pour remainder into a resealable bag. Trim skin and large sections of fat away from lamb; cut meat into 3/4-inch cubes. Add meat to marinade; seal bag and refrigerate for several hours or overnight. Thread meat onto skewers; grill over medium heat for 10 to 15 minutes, turning and brushing with marinade several times. Whisk vinegar into reserved marinade; stir into tomatoes then pour over meat. Makes 4 servings.
