Spicy Chipotle Ribs
2 slabs pork ribs

Dry Rub:
2 tbsp. chili powder
1 tbsp. garlic salt
2 tsp. ground cumin
1 tsp. ground oregano

Chipotle Barbecue Sauce:
1 cup prepared barbecue sauce
3/4 cup chunky salsa
3 tbsp. honey
1 to 2 canned chipotle chiles in adobe
sauce, minced
1 tbsp. adobo sauce (from chipotle chiles)
Juice of 1 lime
Prep time: 10 minutes
Cook time: 1-1/2 hours

Preheat oven to 400ºF. Place ribs in 2 large, shallow pans
and add 1/2 inch of water. Seal tightly with foil and bake
for 1 hour.

Meanwhile, stir together dry rub ingredients in a small
bowl; set aside. Combine chipotle barbecue sauce ingredients
in a small saucepan; simmer for 5 minutes and set aside.
Remove ribs from oven and drain water. Sprinkle on both
sides with dry rub and place on a grill over medium-low
heat; grill for 5 minutes per side. Grill for 10 to 20
minutes more, turning and brushing with sauce frequently,
until ribs are lightly charred and coated with sauce.

Makes 8 servings.

These ribs are delicious and easy to prepare! The highlight is really the Chipotle BBQ Sauce. I've now made the sauce for chicken and it very tasty!
