Orange and Spice Yams
Orange and Spice Yams
3½ lbs. yams peeled and sliced 1/4-inch thick
1/2 cup dried cranberries
1/2 cup each: orange liqueur or triple sec and orange juice (or all orange juice)
1/4 cup butter
1/4 cup brown sugar
1/2 tsp. ground allspice
1/2 tsp. cinnamon
1/2 cup pecans chopped

Prep: 30 minutes  Cook: about 1 hour  Serves: 10 to 12 

1. Place yams in a large pot fitted with a steamer basket. Steam for 15 minutes or until tender when pierced with a fork. Let cool slightly, then arrange in a lightly buttered 13 X 9-inch baking dish.
2. Preheat oven to 425°F. Bring cranberries, liqueur, juice, butter, brown sugar and spices to a boil in a small saucepan; reduce heat and simmer for 10 minutes. 3. Drizzle yams with orange mixture and sprinkle with pecans. Bake for 30 minutes.
