Fuji Nana's Chocolate Almond Toffee
Fuji Nana's Chocolate Almond Toffee
Ingredients
1 cup unblanched whole almonds
1 cup butter
1 cup sugar
1/2 tsp. vanilla
1/4 tsp. salt
1 cup milk-chocolate or semi-sweet chocolate chips
1/2 to 1 cup walnuts finely chopped or ground

Makes: 16 servings

1. Preheat oven to 350°F. Place almonds on a large baking sheet and bake for 5 to 10 minutes to lightly toast. Place in a single layer on a foil-lined baking sheet over an area measuring 12 X 7-inches; set aside.
2. Place butter, sugar, vanilla, and salt in a heavy 2-quart saucepan. Cook over high heat, stirring constantly with a clean, dry wooden spoon until butter is melted. Continue cooking and stirring for 5 to 7 minutes or until candy is color of unblanched almonds or until mixture reaches 285°F (soft crack) on a candy thermometer. Immediately pour over almonds, covering all nuts. Cool
completely.
3. Meanwhile, melt chocolate in a heavy saucepan over low heat or in the microwave oven for 1 to 2 minutes or until chocolate is soft enough to stir smoothly, stirring often to avoid burning. Spread over cooled toffee and sprinkle with walnuts. Let cool until chocolate has hardened, then break into serving-size pieces.
