Carbonara Mac 'n' Cheese
Carbonara Mac 'n' Cheese Bites
1 tbsp. olive oil
1/2 cup panko bread crumbs
1/2 cup shredded Parmesan cheese
Classic Mac 'n' Cheese (see separate recipe)
2 eggs
1/2 cup fat-free half and half
1 cup shredded sharp Cheddar cheese
1/2 cup crumbled bacon
olive oil cooking spray

Prep: 20 minutes Cook: about 50 minutes total Serves: 12

Preheat oven to 350°F and spread 1 tbsp. olive oil in the bottom of a 13 X 9-inch baking dish. Stir together 1/2 cup each: panko bread crumbs and shredded Parmesan cheese; sprinkle half the mixture into the pan. Prepare Classic Mac ‘n’ Cheese (click here to go to recipe); let cool to warm. Whisk together 2 eggs and 1/2 cup fat-free half and half.
Stir into macaroni with 1 cup shredded sharp Cheddar cheese and 1/2 cup crumbled bacon. Sprinkle with remaining bread crumb mixture and cook for 30 minutes. Let cool, then cut into 1½-inch squares. Preheat oven to 450°F and coat a baking sheet with olive oil cooking spray. Place mac ‘n’ cheese squares on sheet and coat liberally with olive oil spray. Bake for 10 minutes.

The way this is worded it sounds as if you make the ENTIRE recipe for Classic Mac n Cheese, then you add the eggs, half n half, cheese and bacon to the mac n cheese(with alfredo,broth, cheese, etc.) Is this correct?

Don't bother attempting this! I've been questioning the SAME thing! I'm trying to make this for a party now and totally confused...but agreed to try it! First, I think the amount of macaroni is incorrect. I did the Classic Mac & Cheese and then went back and added the egg & milk (perhaps a binding agent?) but it was watery. I'm now making the remaining box of macaroni to add to it. I'll post more if it turns out OK or not.

I have made this several times and it was a huge hit. the original recipe that was printed in the magazine had some alternate recipes for the mac n' cheese. I made it with Alfredo sauce and it is way better...
