Sweet Potato Fries with Cranberry Ketchup

Sweet Potato Fries with Cranberry Ketchup
Ingredients
2 lbs. sweet potatoes or yams
1 tbsp. vegetable oil
salt to taste
Cranberry Ketchup:
1/2 cup ketchup
1/2 cup whole berry cranberry sauce
Directions

Prep: 20 minutes Cook: 30 minutes Serves: 12

Preheat oven to 425°F and spray a large baking sheet with nonstick cooking spray. Peel 2 lbs. sweet potatoes or yams and cut into French fry size sticks. Toss with 1 tbsp. vegetable oil in a large bowl and spread in a single layer on prepared baking sheet. Bake for 30 minutes or until golden brown, stirring occasionally. Season with salt to taste and serve with Cranberry Ketchup: Stir together 1/2 cup ketchup and 1/2 cup whole berry cranberry sauce.
