Mexican Fruit Crepes
Mexican Fruit Crepes
Ingredients
3 tbsp. brown sugar
1-1/2 tbsp. fresh lime juice
1 (8.8- oz.) package organic strawberries rinsed, hulled and sliced
1 cup blueberries
1 cup low-fat ricotta cheese
2 tbsp. sugar
1/4 tsp. ground cinnamon
6 (5 -inch) flour tortillas
2 tbsp. butter divided
Directions
Prep time: 10 minutes, Cook time: 10 minutes

Combine brown sugar and lime juice in a small bowl; stir to dissolve sugar. Add fruit and set aside. To prepare crepes, combine ricotta cheese, sugar and cinnamon in a small bowl. Spoon an even amount of mixture on half of each tortilla; fold over to enclose filling. Melt 1 tbsp. butter in a large skillet. Place half of the filled tortillas in skillet and cook for several minutes on each side until crisp and lightly browned. Repeat with remaining butter and tortillas. Spoon fruit topping inside crepes and serve warm.

Makes 6 servings.
