Pan-Fried Malanga
2 tbsp. butter
2 small malangas (about 1 lb.) peeled, sliced into 1/8 rounds
Salt and garlic pepper to taste freshly ground
Prep time: 5 minutes
Cook time: 10 to 15 minutes

Melt butter in a large skillet over medium-high heat. Add malanga slices and cook for 10 to 15 minutes, turning frequently, until browned and crispy on the outside and tender in the middle. Season with salt and pepper.

Makes 4 servings.
