Sesame Ginger Chicken & Brown Rice
2 bags Success® Brown or White Rice
1 tbsp. olive oil
1 lb. chicken breasts boneless, skinless, cubed in 1/2-inch pieces
4 each: celery ribs and green onions sliced 1/4-inch thick
1 large red bell pepper diced
2/3 cup sesame ginger marinade
1 (5- oz. to 7- oz.) package fresh baby spinach leaves
Prepare rice according to package directions. While rice is cooking, heat olive oil in a large nonstick skillet and cook chicken on medium-high heat for 10 minutes, stirring occasionally. Add celery, green onions and red pepper; cook 2 minutes. Add cooked rice and marinade to skillet; stir to combine ingredients. Serve over spinach leaves. Garnish with celery leaves, if desired.

Serves 4.
