Thai Peanut Chicken Salad
Thai Peanut Chicken Salad
3 cups Mahatma Jasmine Long Grain cooked
Rice chilled
2 cups cooked chicken breast shredded
1 cup carrots shredded
1 cup julienne strips red and yellow bell pepper
1 cup celery thinly sliced
1/2 cup green onions sliced
1/4 cup cilantro chopped
Thai Dressing (recipe follows)
1/4 cup peanuts chopped
Prep time: 20 minutes, Chill time: 1 to 2 hours

Combine rice, chicken, carrots, peppers, celery, onions and cilantro in a large bowl. Drizzle with dressing and toss well to coat. Cover and chill for 1 to 2 hours, stirring occasionally. Transfer to a serving bowl and sprinkle with peanuts. Thai Dressing: Whisk together 1/2 cup Soy Vay Veri Veri Teriyaki, 1/4 cup rice vinegar, 3 tbsp. peanut satay sauce* and 2 tbsp. sesame oil.

*Satay sauce is found in the Asian Foods section.

Makes 6 servings.
