Chocolate Chip Flax Oatmeal Cookies
1 cup Earth Balance Natural Buttery Spread
1 cup brown sugar
1 cup honey
2 ea eggs
1 tsp. vanilla extract
3-1/3 cups organic whole wheat pastry flour (Natural Foods Dept. bulk bin #626)
2 cups rolled oats (Natural Foods Dept. bulk bin #610)
1 cup ground flaxseed (Natural Foods Dept. bulk bin #673)
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. sea salt
1 cup mini chocolate chips
1 cup almonds

Prep: 10 minutes Cook: 12 to 14 minutes Makes: 48 cookies

1. Preheat oven to 350°F and coat 2 large baking sheets with nonstick cooking spray. Cream buttery spread, brown sugar and honey in a medium bowl. Add eggs and vanilla and beat well. Stir together dry ingredients, then stir into the creamed mixture.
2. Add chocolate chips and almonds. Drop by tablespoonfuls 2 inches apart onto prepared baking sheets and bake for 12 to 14 minutes.
