Quick Tiramisu
Quick Tiramisu
1 (8- oz.) container plain mascarpone cheese (from the Deli case)
1 (6- oz.) container vanilla yogurt
6 tbsp. sugar divided
1/2 cup heavy cream
1/4 cup DeNapolean Coffee Liqueur
1/4 cup strong coffee
1-1/2 tbsp. rum
1-1/2 (3- oz.) packages Specialty Bakers Ladyfingers (36 small, soft ladyfingers from the bakery)
1/2 cup bittersweet chocolate shaved
Prep time: 20 minutes, Chill time: 6 to 24 hours

In a medium bowl, beat mascarpone cheese, yogurt and 4 tbsp. sugar until smooth. In a separate chilled bowl, beat cream until soft peaks form. Add remaining 2 tbsp. sugar and beat until stiff peaks form. Carefully fold whipped cream into cheese mixture; set aside. Combine liqueur, coffee and rum in a small shallow dish. Place ladyfingers in a single layer on a large baking sheet and sprinkle evenly with all of the coffee mixture. Place half of the ladyfingers in the bottom of an 8-inch baking dish so that they fit tightly. Spread with half of the cream mixture, then repeat layers. Cover tightly and chill for at least 6 hours or up to 24 hours. Sprinkle with shaved chocolate before cutting into squares and serving.

Makes 8 servings.

This is probalby the easiest and best tiramisu recipe I have ever tried. My daughter, who loves tiramisu, was very impressed. You must try it!
