Creamy Mixed Onion Soup
Creamy Mixed Onion Soup
3 tbsp. butter
2 large onions peeled and chopped
2 large shallots peeled and sliced
2 leeks (white and pale green parts only) well-rinsed and thinly sliced
3 tbsp. flour
4 cups beef broth
1/4 cup dry sherry
1 tsp. McCormick Gourmet Collection Herbes de Provence
1 cup fat-free or regular half-and-half
Sea salt and pepper to taste freshly ground
green onions thinly sliced
Prep time: 15 minutes, Cook time: 45 to 50 minutes

Melt butter in a large pot. Add onions; cook over medium-low heat for 15 minutes, stirring frequently. Add shallots and leeks; cook for 10 minutes more (a little browning is OK). Stir in flour; cook over medium heat for 1 minute. Slowly stir in broth, sherry and herbs. Bring to a boil; reduce heat and simmer for 20 minutes. Stir in half-and-half and simmer until heated through. Season to taste with salt and pepper. Sprinkle each serving with green onions.

Makes 4 servings.
