Pork Chops with Honey Nut Apple Stuffing

Pork Chops with Honey Nut Apple Stuffing
Ingredients
3 tbsp. butter
1 cup green apple
1 large shallot
2 tbsp. honey
2 tbsp. chopped walnuts, toasted
1/4 tsp. allspice
4 (3/4 -inch thick) boneless pork loin chops
1/2 tsp. thyme
Sea salt and freshly ground pepper to taste
Directions

Prep: 20 minutes, Cook: 60 minutes, Serves: 4

1. Melt butter in a medium skillet. Add apple and shallots. Cook over medium heat for 10 minutes or until very soft. Stir in honey, walnuts and allspice; cook for several minutes more or until thick and sticky. Set aside.

2. Preheat oven to 375°F and coat a foil-covered, 11-by-7-inch baking dish with nonstick cooking spray. Sprinkle both sides of pork with thyme, salt and pepper. Cut a slit into each pork chop to form a pocket and spoon equal amounts of apple filling inside each.

3. Place slit side up in prepared baking dish. Cook for 40 to 45 minutes or until internal temperature reaches 145°F.
