Pork Chops with Honey Nut Apple Stuffing
Pork Chops with Honey Nut Apple Stuffing
3 tbsp. butter
1 cup green apple
1 large shallot
2 tbsp. honey
2 tbsp. chopped walnuts, toasted
1/4 tsp. allspice
4 (3/4 -inch thick) boneless pork loin chops
1/2 tsp. thyme
Sea salt and freshly ground pepper to taste

Prep: 20 minutes, Cook: 60 minutes, Serves: 4

1. Melt butter in a medium skillet. Add apple and shallots. Cook over medium heat for 10 minutes or until very soft. Stir in honey, walnuts and allspice; cook for several minutes more or until thick and sticky. Set aside.

2. Preheat oven to 375°F and coat a foil-covered, 11-by-7-inch baking dish with nonstick cooking spray. Sprinkle both sides of pork with thyme, salt and pepper. Cut a slit into each pork chop to form a pocket and spoon equal amounts of apple filling inside each. Place slit side up in prepared baking dish. Cook for 40 to 45 minutes or until internal temperature reaches 145°F.
