Lemon Herb Roasted Potatoes

Lemon Herb Roasted Potatoes
6 lb. small Yukon Gold potatoes cut into 1 1/2-inch chunks
1/3 cup extra virgin olive oil
2 tsp. sea salt
Freshly ground pepper to taste
8 bay leaves
1 bunch fresh thyme
2 lemons sliced
Prep time: 15 minutes, Cook time: 50 to 60 minutes

Preheat oven to 425°F. Place potatoes, oil, salt and pepper in a large bowl; toss well to mix ingredients. Spread in 1 layer onto 2 shallow baking sheets; lay bay leaves, thyme sprigs and lemon slices over potatoes. Bake for 50 to 60 minutes, stirring occasionally and moving the baking sheet from the upper rack to the lower rack and vice versa halfway through the cook time. When done, potatoes will be lightly browned and tender when pierced with a fork. Remove bay leaves, thyme stems and lemon before serving. Season to taste with additional salt and pepper, if desired.

Makes 12 servings. (You’ll need half of the potatoes for the salad.)
