Almond Stuffed Date Rumaki
30 small dates, pitted
30 whole natural almonds, toasted
15 slices bacon, cut in half
1/2 cup tomato sauce
1/2 cup soy sauce
1/2 cup pineapple juice
1/4 cup brown sugar
2 cloves garlic, minced

Prep: 30 minutes, Cook: 1 hour, Makes: 30 appetizers

1. Preheat oven to 400°F. Cut each date in half crosswise, leaving a small hole in the center. Stuff an almond inside of each date piece and wrap each with half a bacon slice.

2. Place in a 13x9-inch baking dish and cook for 30 minutes; drain excess fat.

3. Combine remaining ingredients in a small bowl and pour over rumaki, tossing lightly to coat with sauce; bake for 30 minutes more, stirring occasionally.

4. Pour rumaki and sauce into a shallow decorative bowl. Serve hot.
