Sweet and Tangy Cranberry Brie
Sweet and Tangy Cranberry Brie
1/2 lb. wedge Brie cheese
1/2 cup dried cranberries
1/2 cup red wine
1/2 cup water
2 tbsp. honey
1 tbsp. balsamic vinegar
fresh thyme Chopped

Prep: 5 minutes Cook: 25 to 30 minutes Makes: 8 appetizers

1. Cut Brie in half lengthwise and let come to room temperature. Combine cranberries, wine and water in a small saucepan. Bring to a boil; reduce heat and simmer for 15 minutes.
2. Stir in honey and vinegar; simmer over low heat for 10 to 15 minutes more or until mixture is thick and syrupy. Let cool. (Mixture will thicken as it cools.)
3. Spread mixture on the bottom layer of the Brie, sprinkle with thyme and replace top of Brie. Serve with baguette slices.
