Gruyère Herb Puffs

Gruyère Herb Puffs
1 cup water
1/2 cup butter
1/4 tsp. salt
1 cup flour
4 eggs
2 cups shredded Gruyère cheese, divided
1 tbsp. chopped fresh sage

Prep: 15 minutes, Cook: 25 to 30 minutes, Makes: 48 puffs

1. Preheat oven to 375°F. In a large saucepan, bring water, butter and salt to a boil. Lower heat and beat in flour with a wooden spoon. Remove from heat and beat in eggs, one at a time, beating for 1 minute after each addition. (Mixture should pull away from the sides of the pan.)

2. Stir in 1½ cups of cheese and sage. Drop by teaspoonfuls onto parchment-lined baking sheets and top with remaining cheese. Bake for 25 to 30 minutes or until light golden brown on the outside and dry on the inside.
