Fava Bean Puree
4 cups fresh fava beans (in shell)
1/4 cup extra virgin olive oil
2 tbsp. lemon juice
Salt to taste

Prep: 20 minutes Cook: 1 minute Serves: 6

Shell and blanch beans for 1 minute in salted boiling water. Drain, reserving 1/4 cup of water. Immediately puree in a blender or food processor with reserved water, oil and lemon juice; season to taste with salt.
