Caramelized Onions
1 (10- oz.) package pearl onions
1 tbsp. butter
1/4 cup dry white wine
1 cup reduced-sodium chicken broth
Salt to taste

Prep: 10 minutes Cook: about 30 minutes Serves: 6

1. Cook onions in boiling water for
2 minutes; drain and let cool. Squeeze onions at the root end to slip peels off.
2. Melt butter in a large skillet over medium heat. Add onions and cook for about 10 minutes, stirring frequently or until they start to turn golden brown (be careful not to burn them).
3. Add wine and cook for 3 minutes or until liquid is reduced to a glaze, stirring occasionally. Add chicken broth and salt to taste. Reduce heat to medium-low and simmer for 10 to 20 minutes or until most of the liquid has cooked off and onions are tender and golden brown.
