Spicy Beef Tacos
2 cups small julienne slices leftover cooked roast beef
1/3 cup red (or green) chile salsa
1/2 tsp. Mexican seasoning
8 small flour (or corn) tortillas
1 cup cooked black beans heated
1 medium avocado peeled and sliced
1/2 small red onion thinly sliced
Shredded lettuce
Shredded Jack cheese
Prep time: 15 minutes
Cook time: 10 minutes

In a small bowl, stir together beef, salsa and seasoning.
Heat in a small skillet or in the microwave until warm; set
aside. Heat tortillas in a hot skillet or in the microwave
covered with a damp paper towel. Spoon beef, hot beans,
avocado and onion into warm tortillas. Top with lettuce,
cheese and salsa.

Makes 4 servings.
