Grilled Skirt Steak Tacos  with Grilled Onions
Grilled Skirt Steak Tacos with Grilled Onions
Ingredients
Marinade:
6 garlic cloves unpeeled
2 tbsp. vegetable or olive oil
3 tbsp. cider vinegar
1/4 tsp. each: ground black pepper and cinnamon
Pinch of ground cloves
1/2 tsp. dried oregano, preferably Mexican
1/4 tsp. salt
Tacos:
1 lb. skirt steak or trimmed
1 lb. chicken breasts boneless, skinless
12 large green onions
12 warm tortillas
A small bowlful of lime wedges for serving

Prep: 30 minutes Marinade: 30 minutes to 6 hours Cook: 30 minutes Serves: 4

1. Roast unpeeled garlic cloves in a small skillet over medium heat for 10 to
15 minutes, turning occasionally, until softened and blackened in spots. (Or
use 6 cloves Christopher Ranch Roasted Garlic.) Let cool, then peel and place
in a food processor or blender with remaining marinade ingredients and puree
until smooth.
2. Place meat in a glass baking dish. Cover with marinade, turning to coat both sides. Refrigerate, covered, for 30 minutes or up to 6 hours. Discard marinade.
3. Heat one side of a grill to medium-high. Brush or spray onions with oil and sprinkle with salt. Lay onion tops on cooler side of grill, with bulbous ends over the heat. Cook for a few minutes on each side or until soft and golden.
4. Brush or spray meat with oil and cook, turning once, for about 2 minutes on each side for medium (chicken will take slightly longer), or until richly browned and done to your liking. Move to coolest part of grill and let rest for a couple of minutes.
5. Cut meat into 3 to 4-inch sections, then cut each section into thin strips across the grain. Sprinkle with salt and place in a warm serving dish. Serve with warm tortillas, grilled onions, lime wedges, salsa and Tangy Green Guacamole: Mash
3 large, ripe peeled and pitted avocados in a medium bowl with 1/2 cup Frontera Tomatillo Salsa, 1/4 cup chopped fresh cilantro and about 1/2 tsp. salt.
