Crunchy Topped Cheesy Green Eggs
Ingredients
Crunchy Crumb Topping:
1 tbsp. Sunnyside Farms Butter
1/2 cup crushed croutons
Eggs:
2 tbsp. Sunnyside Farms Butter
1 cup fresh asparagus thinly sliced
1/2 cup green onions thinly sliced
1 dozen Raley's Eggs
1 tsp. ground Raley's Garlic Sea Salt
1 cup Raley's Sharp Cheddar Cheese shredded
3 to 4 tbsp. fresh basil snipped
Raley's Ground Pepper to taste
Directions

Prep: 10 minutes Cook: 10 minutes Makes: 8 servings

1. To prepare topping, melt butter in a small skillet. Add crushed croutons; cook and stir for a minute over medium heat to lightly brown; set aside.
2. To prepare eggs, melt butter in a large skillet over medium heat. Add asparagus and cook, stirring occasionally, for a few minutes or until crisp-tender. Add onions and cook for 1 minute more.
3. Beat eggs with garlic salt and add to skillet. Reduce heat to medium-low and cook, stirring frequently, until eggs are about half cooked. Add cheese and basil; cook and stir until eggs are barely set, being careful not to overcook (eggs will continue to cook in hot skillet so undercook slightly to avoid tough eggs). Sprinkle with crumb topping and serve immediately.
