Pork Loin Chops with Blue Cheese and  Leek Sauce

Pork Loin Chops with Blue Cheese and Leek Sauce
Ingredients
4 boneless pork loin chops
1 cup leeks sliced
1 tbsp. butter
1/2 cup crumbled blue cheese
1 tbsp. milk
Season to taste with salt and pepper
Directions

Season 4 boneless pork loin chops with salt and pepper to taste. Grill over medium heat for about 5 minutes on each side or until cooked through. While pork is cooking, sauté 1 cup sliced leeks and 1 tbsp. butter in a large skillet over medium-low heat until leeks are very soft. Stir in 1/2 cup crumbled blue cheese and 1 tbsp. milk; continue to cook until sauce is thick. Season to taste with salt and pepper; serve warm over grilled pork.

Makes 4 servings.
