Green Pea Soup with Tarragon
Green Pea Soup with Tarragon
Ingredients
1 tbsp. olive oil
1 cup onion chopped
4 cups fresh shelled or thawed frozen petite peas
1 (32- oz.) container vegetable stock
3 tbsp. fresh tarragon chopped
season to taste with salt and pepper
Directions

Heat 1 tbsp. olive oil in a large saucepan over medium-high heat. Add 1 cup chopped onion and cook, stirring frequently, until tender. Add 4 cups fresh shelled or thawed frozen petite peas and 1 (32-oz.) container vegetable stock; bring to a boil. Reduce heat to medium and cook for 10 minutes. Stir in 3 tbsp. chopped fresh tarragon and puree; season to taste with salt and pepper. Serve warm or chilled with a dollop of plain yogurt.

Makes 4 servings.
