Tilapia with Creamy Pear Vinaigrette

Tilapia with Creamy Pear Vinaigrette
3 Full Circle Organic Pear Halves drained
4 tbsp. Full Circle Organic Extra Virgin Olive Oil divided
3 tbsp. white wine vinegar
1 tsp. Full Circle Organic Spicy Brown Mustard
1/4 tsp. salt
2 (12- oz.) packages Full Circle Organic Tilapia Fillets thawed
6 cups Full Circle Organic Spring Mix

Prep: 5 minutes, Cook: 10 minutes, Serves: 4

1. Puree pears, 3 tbsp. olive oil, vinegar, mustard and salt in a blender orfood processor. Chill until ready to serve.
2. Pat tilapia between paper towels to remove excess moisture. Heatremaining olive oil in a large nonstick skillet over medium-high heat. Add
tilapia and cook for about 2 minutes on each side or fish is golden brownand flakes easily with a fork.
3. Toss spring mix with a little of the dressing. Place on 4 plates and top withfish. Drizzle with remaining dressing.
