Tuna and Noodles with Cheddar Chip Topping
1 tbsp. butter
1 cup celery chopped
1 cup onion chopped
1 cup red bell pepper chopped
1 (12- oz.) can solid white albacore tuna in water drained and flaked
1 (10.75- oz.) can Cheddar cheese soup
8 oz. Nob Hill Trading Co. Gobetti cooked and drained
1 (2.25- oz.) can sliced black olives drained
1 cup frozen C&W Petite Peas
1 cup fat-free half-and-half
2 cups Cheddar and sour cream potato chips crushed
Prep time: 20 minutes, Cook time: 45 minutes

Preheat oven to 350°F and spray a 13-by-9-inch baking dish with nonstick cooking spray. Melt butter in a large skillet over medium heat. Add celery and onion; cook, stirring occasionally, for about 10 minutes or until onion is soft. Add red bell pepper and cook for 5 minutes more. Stir in remaining ingredients except potato chips. Turn into prepared dish and sprinkle with chips. Bake for about 30 minutes or until bubbly and lightly browned on top.
